The Only Pancake Recipe You'll Ever Need

I stumbled across this simple pancake recipe a few years ago and it has been my holy grail ever since. There are no crazy ingredients, foolproof and a guaranteed crowd pleaser. I've whipped this up countless times over the years and it's a firm favourite among family and friends. Perfect for hungover Saturdays, lazy Sunday morning brunches and of course Pancake day. This recipe is enough for 2 hungry people and serves up 4-6 pancakes depending on how thick you like them.

you'll need:

110 grams of all-purpose flour (you can use gluten-free or spelt for a healthier alternative)
2 large eggs
200 ml Milk
75 ml water
pinch of salt
butter for frying

Sieve the flour and salt into a large bowl and crack your eggs in the middle. Whisk until combined and slowly add your milk and water. At first, your batter will appear thick and sticky but the milk will make it silky smooth. Throw a knob of butter into a hot frying pan and fry away! Flip every 1-2 minutes depending on how thick they are. I prefer crepes this takes a little longer as you have to cook them individually but by far the best way to have them in my opinion!

Get as creative as you like with your toppings, butter and maple syrup are a classic, Nutella and Oreos are a match made in heaven, but I'm a lemon and sugar kind of girl.

The Essentials

I've made it my mission this year to simplify my skincare regime.

I'm guilty of getting caught up in a whirlwind makeup counter purchase and adding more lotions and potions to my never ending collection. I am starting to make my way through my ridiculous beauty stash and rekindling my love with old forgotten favourites and making new discoveries.

I'm going back to basics and sticking with the products I know works for my skin. I'm keeping things simple with something calming to cleanse my skin day and night. Angels on Bare Skin has been a staple in my skincare for a long time and a cleanser I always go back to. Its extremely gentle on the skin while cleaning my skin excess oil and dirt leaving it feeling fresh and clean. I'm prone to redness as my skin is pretty sensitive, but this calms my skin and leaves it looking even and healthy.

Odacite is a new addition to my skincare and I've been obsessed with this serum form the first time I used it. Ma+N is a deeply restorative serum and replenishes the elasticity and hydration of the skin. This is extremely potent and comes in a tiny bottle so three drops are more than enough, and you feel it getting to work immediately. Its made beside completely natural ingredients such as virgin Marula, Neroli, Lemon-Myrtle and Rose oils and is GMO-free.

Keihls midnight recovery concentrate and Caudalie Eau De Beauté have been firm favourites of mine for years. I can see a big difference right away after using the Midnight Recovery Concentrate, my skin looks brighter, healthier and my fine lines (yes, I have those) look less noticeable. It has a gorgeous lavender scent that I find so relaxing at night time. I had completely forgotten about Eau De Beauté until my raided my best friends beauty tray and rediscovered it. Its so refreshing and instantly brightens and tones your skin. I like to use this before my morning skincare routine and throughout the day as a pick me up.

I've recently fallen in love with Jo Malone and I can't get enough of their fragrances. I didn't realise that they were designed to be layered until a few weeks ago, and my favourite combinations are English Oak & Hazelnut with Peony & Blush Suede. Its the perfect balance of floral and spicy.
